macadamia shortbread

This a very buttery shortbread. Any nuts can be substituted for the macadamias, or the nuts can be omitted for a plain shortbread. Be careful not to get too much colour when baking, shortbread should be light golden.

ingredients

175 g (6 oz) unsalted butter

250 g (9 oz/12/3 cups) plain (all-purpose) flour

60 g (2¼ oz/1/3 cup) rice flour

1 teaspoon baking powder

½ teaspoon salt

125 g (4½ oz) caster (superfine) sugar

80 g (2¾ oz/½ cup) macadamia nuts, chopped
